Quick and Elegant Dinner for Two - Chicken Breasts with Sun-dried Tomatoes and Mushrooms in Cream
2 chicken breasts (~1 lb)
3 oz package of sundried tomatoes
8 oz sliced baby Bella mushrooms
2-3 minced garlic cloves
1 Tablespoon butter
1 Tablespoon EVOO
3 sprigs fresh thyme
1 small sauce pan
1 frying pan
1. Into the small saucepan, add the cream, sun-dried tomatoes, garlic and thyme. Simmer for 10 minutes over a low heat to infuse the cream with other ingredients.
2. In the frying pan, heat the oil and butter, add the slices chicken and brown the chicken. Then add the sliced mushrooms and sauté until browned and the chicken is cooked through.
3. Remove the frying pan from the heat and pour the cream, tomatoes, garlic and thyme into the frying pan. Gently spoon the cream sauce over the mushrooms and chicken.
